Healthy Albacore Tuna Spring Salad Recipe




Something reminded me the other day of tuna fish sandwiches. I used to LOVE them. I used to eat them all the time. This made me crave some tuna. I don't regularly eat bread so I decided to create a healthy salad.

And to give credit where should be given, I give that credit to a friend of mines mother who is from Lebanon and I never did truly love tuna fish sandwiches until I had one she made. The secret ingredient is green apple slices! Brilliant. Now I always add some sort of apple ingredient to my tuna salad mixes. Thanks Lola!

Below is the recipe for Healthy Albacore Tuna Spring Salad

Ingredients:

- 1 can of wild albacore tuna (I used Wild Planet no salt added from wholefoods)
- Tahini
- asian pear
- red onion
- spring mix salad
- walnuts
- kalamata olives
- avocado
- olive oil

Directions:

In a bowl, dump the tuna in and smash it up. Add the Tahini sauce in (just about the same amount you would add mayo)and mix that up well. Then dice the red onions, the asian pear and kalamata olives add to the mix. On a plate or bowl lay the spring mix and then add the tuna mix on top. Top it off with walnuts and lightly drizzle olive oil. Presto! Done! and SOOOO GOOD!
