Tia's Healthy, Light, Olive Oil & Fresh Oregano Salad Dressing


Just came back from visiting Miami. My great aunt lives in Miami (we call her Tia) and she is probably my biggest idol when it comes to fresh, vegetarian, homemade, authentic, flavorful cooking.

What I like about her recipes is that they are simple, but always have a powerful flavor to them. Either robust or just enough spice. Most of Tia's recipes are either authentic Peruvian dishes or inspired by them (we are Peruvian). Also, almost everything she uses comes from her own garden! That is like my dream come true. Tia was organic before it ever became a trend.

Here for example, here is a salad dressing she whipped up real quick. So simple, so fresh and light. Oregano is definitely not overrated

Tia's Healthy, Light, Olive Oil & Fresh Oregano Salad Dressing Ingredients:

- Olive Oil
- lemon
- garlic
- fresh oregano
- (all my ingredients are organic)

Directions:

You will have to scale this up depending on how many people you are making it for. My serving is for 2 people.

So you will need to get some sort of container or empty dressing bottle to put the olive oil in. The olive oil is the main ingredient so use as much as you think you would put on the salad. Then simply squeeze like 2-3 slices of lemon in. Mince 2-3 cloves of garlic and add that in. Last, get some oregano (I used like 10 leaves) and chop them up and put them in. Shake up the bottle and you are all set!
